Equipment

Ingredients
  

  • 2 cups Chicken breast cooked and shredded
  • 1/4 cup Chipotle sauce
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Mozzarella cheese shredded
  • 4 large Flour tortillas
  • 2 tbsp Butter for grilling
  • To garnish optional Fresh cilantro, chopped

Instructions
 

Prepare the Chicken Mixture

  • Combine the shredded chicken with chipotle sauce in a bowl.
  • Combine the chicken with the sauce and mix it until it is well covered.

Assemble the Melts

  • Lay out the tortillas and evenly distribute the chicken mixture on one half of each tortilla.
  • Top the chicken with cheddar and mozzarella cheeses.
  • Fold the tortillas over to make a half-moon shape.

Cook the Chicken Chipotle Melts

  • Set the pan on medium heat and add the butter.
  • Place the folded tortillas in the skillet, pressing them slightly.
  • Cook until the tortillas are golden brown and the cheese has melted, about 3-4 minutes per side.

Notes

  • For a lighter version, use low-fat cheese and whole wheat tortillas.
  • If you like it extra spicy, add more chipotle sauce or a pinch of cayenne pepper.
