Ingredients
  

  • 2 tablespoons Olive oil
  • 1 large Onion finely chopped
  • 3 cloves Garlic minced
  • 5 medium Green chilies roasted and peeled
  • 2 cups Tomatoes diced
  • 4 cups Chicken broth
  • 2 cups Chicken breast cooked and shredded
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • Salt and pepper to taste

Instructions
 

Prepare the Ingredients

  • Bring the olive oil to a medium-low temperature in a large pot.
  • Add the onion and garlic, cooking until they are soft and translucent, about 5 minutes.
  • Stir in the green chilies and tomatoes, cooking for another 5 minutes.

Add the Liquids and Spices

  • Add the chicken broth and boil the whole thing for a while.
  • Add the shredded chicken, cumin, and oregano.
  • Depending on your taste, add salt and pepper.

Let It Cook

  • Reduce the heat and let the chili simmer uncovered for about 45 minutes, stirring occasionally.
  • Adjust the seasoning if necessary.

Notes

  • Thicken Your Chili: If you prefer a thicker chili, you can mix in a tablespoon of cornstarch with two tablespoons of water and add it to the chili in the last 10 minutes of cooking.
  • Make It Vegetarian: Easily make this chili vegetarian by substituting the chicken with cubed tofu or extra beans. It’s just as delicious!
