Ingredients
  

  • 4 cups Mixed greens
  • 1 cup Cherry tomatoes halved
  • 1 medium Cucumber sliced
  • 1 small Red onion thinly sliced
  • 100 g Feta cheese crumbled
  • 1/4 cup Roasted almonds
  • 1/4 cup Mint leaves chopped
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • To taste Salt
  • 1 tsp Black pepper

Instructions
 

Prepare the Ingredients

  • Gather all ingredients: Make sure everything is washed and ready to use.
  • Chop the veggies: Slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.
  • Crumble the cheese: Crumble the feta cheese into bite-sized pieces.

Mix the Salad

  • Combine greens and veggies: In your large mixing bowl, toss together the mixed greens, cherry tomatoes, cucumber, and red onion.
  • Add cheese and almonds: Sprinkle the crumbled feta and roasted almonds over the top.

Dress It Up

  • Make the dressing: Mix the olive oil, lemon juice, salt, and pepper in a small bowl with a whisk.
  • Toss everything together: Pour the dressing over the salad and gently toss everything together with your salad tongs until well coated.

Notes

  • For an extra touch of flavor, add a sprinkle of sumac or za’atar over the top of your salad before serving.
