Equipment

Ingredients
  

  • 1 medium head Cabbage shredded
  • 1 large Onion sliced
  • 3 cloves Garlic minced
  • 2 tablespoons Olive oil
  • 1 can 14 oz Diced tomatoes
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

Prep the Veggies

  • In your large skillet, heat the olive oil over medium heat.
  • Add the sliced onion and minced garlic. Add them to the pan and cook until soft and fragrant.

Cook the Cabbage

  • Toss the shredded cabbage into the skillet. Stir it around so it gets coated with the olive oil and flavors from the onion and garlic.
  • Cook until the cabbage is slightly softened.

Add Tomatoes and Seasonings

  • Stir in the can of diced tomatoes, including the juice, for that lovely saucy consistency.
  • Sprinkle the Italian seasoning, salt, and black pepper. Combine everything thoroughly.

Let It Simmer

  • Reduce the heat to low. Cover the skillet and let everything simmer together for about 20 minutes. Stir occasionally.
  • The cabbage should be tender but not mushy, and the flavors well blended.

Garnish and Serve

  • Once done, check the seasoning and adjust if necessary.
  • Freshly chopped parsley can be added as a garnish to add color and flavor.

Notes

  • For a bit of a kick, add a pinch of red pepper flakes when you add the tomatoes.
  • If you prefer a bit more texture, add some sliced bell peppers along with the cabbage.
