Ingredients
  

  • 2 cups Lobster meat cooked and chopped
  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 cup Heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh tarragon chopped
  • 1 cup Panko breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • To taste Salt and pepper

Instructions
 

Preparing the Filling

  • Preheat your oven to 375°F (190°C).
  • Over medium-low heat, melt 2 tablespoons of butter in a medium-sized pot.
  • Add the flour and stir to make a roux. Cook for one minute.
  • Gradually whisk in the heavy cream until the mixture is smooth and thickened.
  • Mix in the Dijon mustard, lemon juice, and tarragon. Season with salt and pepper to taste.
  • Carefully mix in the lobster meat until everything is well combined. Remove from heat.

Assembling the Pie

  • Divide the lobster mixture evenly among 4 oven-safe ramekins.
  • In a small bowl, mix together the panko breadcrumbs, grated Parmesan, and the remaining 2 tablespoons of melted butter.
  • Sprinkle the breadcrumb mixture over the lobster in each ramekin.
  • Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the filling is bubbling.
