  • Mixing bowl
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons

Ingredients

  • 2 pounds Potatoes peeled
  • 4 Eggs hard-boiled
  • 1 cup Celery finely chopped
  • 1/2 cup Red onion finely diced
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper freshly ground
  • 3 tablespoons Fresh parsley chopped

Instructions

Step 1 – Prep the Potatoes

  • Place peeled potatoes in a large pot of salted water.
  • Bring to a boil, then reduce heat and simmer until tender but firm, about 15-20 minutes.
  • Drain and let cool slightly before dicing into bite-sized pieces.
  • Note: Avoid overcooking the potatoes to prevent them from turning mushy in the salad.

Step 2 – Mix the Dressing

  • In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper.
  • Whisk until smooth and creamy.

Step 3 – Combine Ingredients

  • In a large bowl, add the diced potatoes, chopped eggs, celery, red onion, and fresh parsley.
  • Pour the dressing over the potato mixture and gently stir to combine.
  • Warning: Be gentle when mixing to keep the integrity of the potato pieces.

Notes

  • Chill Before Serving: Henton’s Potato Salad tastes best when chilled for at least an hour before serving.
  • Adjust Seasonings: Taste and adjust the seasonings, adding more salt or pepper if needed.
