- 2 cups All-purpose flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1 cup Unsalted butter softened
- 1 cup Brown sugar
- 4 large Eggs
- 2 tsp Vanilla extract
- 1 cup Almonds chopped
- 1 cup Pecans chopped
- 1/2 cup Dried cherries
- 1/2 cup Dried apricots chopped
- 1 cup Raisins
- 1 tbsp Orange zest
Preparing the Batter
Preheat your oven to 300°F (150°C). Press parchment paper into the loaf pan.
In a bowl, whisk together flour, baking powder, and salt.
In another bowl, beat the butter and brown sugar until fluffy. Stir in vanilla extract after combining each egg separately.
Stir just until combined after gradually adding the dry ingredients to the wet.
Fold in almonds, pecans, cherries, apricots, raisins, and orange zest.
Baking the Fruitcake
Using a spatula, level the top of the batter once it has been poured into the pan.
Bake for about 2 hours or until a toothpick inserted into the center comes out clean.
After 10 minutes of cooling in the pan, move the cake to a wire rack to finish cooling.
- Storage: Wrap your fruitcake in foil or plastic wrap, and keep it in an airtight container. It tastes even better after a day or two, as the flavors meld together.
- Customizing: Feel free to swap out nuts and dried fruits based on your preferences or what you have on hand.
