Ingredients
  

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Unsalted butter softened
  • 1 cup Brown sugar
  • 4 large Eggs
  • 2 tsp Vanilla extract
  • 1 cup Almonds chopped
  • 1 cup Pecans chopped
  • 1/2 cup Dried cherries
  • 1/2 cup Dried apricots chopped
  • 1 cup Raisins
  • 1 tbsp Orange zest

Instructions
 

Preparing the Batter

  • Preheat your oven to 300°F (150°C). Press parchment paper into the loaf pan.
  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, beat the butter and brown sugar until fluffy. Stir in vanilla extract after combining each egg separately.
  • Stir just until combined after gradually adding the dry ingredients to the wet.
  • Fold in almonds, pecans, cherries, apricots, raisins, and orange zest.

Baking the Fruitcake

  • Using a spatula, level the top of the batter once it has been poured into the pan.
  • Bake for about 2 hours or until a toothpick inserted into the center comes out clean.
  • After 10 minutes of cooling in the pan, move the cake to a wire rack to finish cooling.

Notes

  • Storage: Wrap your fruitcake in foil or plastic wrap, and keep it in an airtight container. It tastes even better after a day or two, as the flavors meld together.
