Making the Dough
Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and salt.
Add Butter: Work the chilled, cubed butter into the flour mixture using your fingers until it resembles coarse crumbs.
Add Milk: Gradually pour in the milk, stirring until the dough comes together.
Knead and Chill: Turn the dough onto a floured surface, knead gently, then wrap in plastic and chill for at least 30 minutes.
Preparing the Filling
Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add Veggies: Stir in the onion, bell pepper, and garlic, cooking until soft.
Season: Mix in the tomato sauce and your choice of spices. Simmer until the mixture thickens. Let it cool.
Assembling the Hot Pockets
Preheat Oven: Set your oven to 375°F (190°C) and put parchment paper on a baking sheet.
Roll Out Dough: Divide the dough into 4 equal parts. On a floured surface, roll out each part into an oval shape.
Add Filling: Spoon the beef mixture onto half of each oval, leaving a border. Sprinkle cheese on top.
Fold and Seal: Fold the dough over the filling to create a pocket. You can seal the edges by pressing them together and then crimping them with a fork.
Egg Wash: Brush each pocket with beaten egg for a golden finish.
Bake: Place the pockets on the prepared baking sheet and bake for 20-25 minutes until golden brown.
