Ingredients
  

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1/2 cup cubed Unsalted butter, chilled
  • 3/4 cup Milk
  • 1 lb Ground beef
  • 1 medium Onion finely chopped
  • 1 medium Green bell pepper diced
  • 2 Garlic cloves minced
  • 1 cup Tomato sauce
  • 1 cup Shredded cheese
  • 1 for egg wash Egg
  • To taste Spices paprika, cumin, black pepper

Making the Dough

  • Mix Dry Ingredients: In a large bowl, combine the flour, baking powder, and salt.
  • Add Butter: Work the chilled, cubed butter into the flour mixture using your fingers until it resembles coarse crumbs.
  • Add Milk: Gradually pour in the milk, stirring until the dough comes together.
  • Knead and Chill: Turn the dough onto a floured surface, knead gently, then wrap in plastic and chill for at least 30 minutes.

Preparing the Filling

  • Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add Veggies: Stir in the onion, bell pepper, and garlic, cooking until soft.
  • Season: Mix in the tomato sauce and your choice of spices. Simmer until the mixture thickens. Let it cool.

Assembling the Hot Pockets

  • Preheat Oven: Set your oven to 375°F (190°C) and put parchment paper on a baking sheet.
  • Roll Out Dough: Divide the dough into 4 equal parts. On a floured surface, roll out each part into an oval shape.
  • Add Filling: Spoon the beef mixture onto half of each oval, leaving a border. Sprinkle cheese on top.
  • Fold and Seal: Fold the dough over the filling to create a pocket. You can seal the edges by pressing them together and then crimping them with a fork.
  • Egg Wash: Brush each pocket with beaten egg for a golden finish.
  • Bake: Place the pockets on the prepared baking sheet and bake for 20-25 minutes until golden brown.
