Ingredients
  

  • 4 cups Cooked rice
  • 2 Eggs
  • 1 cup Carrots diced
  • 1/2 cup Peas
  • 1/2 cup Bell pepper diced
  • 1 Onion finely chopped
  • 1/4 cup Green onions sliced
  • 3 tablespoons Soy sauce
  • 2 teaspoons Sesame oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 cup Cooked chicken diced

Prepare Your Ingredients

  • Gather all ingredients. This will speed up your cooking process and keep you organized!

Heat Your Pan

  • A wok with medium-high heat should be used to heat the sesame oil.

Fry the Eggs

  • Quickly whisk the eggs and pour into the hot wok. Stir until they are lightly scrambled but not fully cooked. Remove and set aside.

Sauté the Veggies

  • You can add a little more oil to the same wok if you need to. Toss in the onions, carrots, and bell peppers. Stir-fry until they are just tender.

Combine and Cook

  • Add the rice, peas, cooked eggs, and chicken. Stir thoroughly to combine.
  • Pour soy sauce over the rice mixture and season with salt and pepper. Stir-fry for an additional 5 minutes or until everything is heated through and mixed well.

Notes

  • Always use cold, cooked rice for the best results.
  • Use any vegetables you happen to have on hand in place of these.
  • For a vegetarian option, omit the chicken and add tofu or more veggies.
