Ingredients
  

  • 200 g Thin rice noodles
  • 1 cup Carrots julienned
  • 1 cup Cucumber julienned
  • 1 cup Red bell pepper julienned
  • 1/4 cup Green onions sliced
  • 1/4 cup Fresh cilantro chopped
  • 1 cup Cooked chicken shredded
  • 2 tbsp Chili sauce
  • 1 tbsp Soy sauce
  • 2 tsp Lime juice
  • 8-10 Spring roll wrappers

Instructions
 

Step: Preparing the Noodle Filling

  • Soak the rice noodles in hot water until they are soft, about 5-7 minutes. Drain and set aside.
  • In a large mixing bowl, toss the noodles with carrots, cucumber, bell pepper, green onions, cilantro, and cooked chicken.
  • Mix chili sauce, soy sauce, and lime juice in a small bowl. Pour this dressing over the noodle mixture and toss to combine.

Step: Wrapping the Rolls

  • Dip one spring roll wrapper in warm water until it’s pliable, about 10-15 seconds.
  • Lay the wrapper flat on a clean surface. Place a portion of the noodle mixture on the lower third of the wrapper.
  • Roll the wrapper tightly after folding in the sides. Ensure the filling is snugly wrapped and the spring roll is sealed.

Step: Cooking the Rolls

  • Heat a skillet over medium heat and lightly oil it.
  • Place the spring rolls in the skillet and cook until golden brown on all sides, turning occasionally, about 2-3 minutes per side.

Notes

  • If you like extra spice, add a teaspoon of red pepper flakes to your noodle mixture.
  • For a vegetarian version, skip the chicken and add tofu or just increase the veggies.
