Spring roll wrappers
- 200 g Thin rice noodles
- 1 cup Carrots julienned
- 1 cup Cucumber julienned
- 1 cup Red bell pepper julienned
- 1/4 cup Green onions sliced
- 1/4 cup Fresh cilantro chopped
- 1 cup Cooked chicken shredded
- 2 tbsp Chili sauce
- 1 tbsp Soy sauce
- 2 tsp Lime juice
- 8-10 Spring roll wrappers
Step: Preparing the Noodle Filling
Soak the rice noodles in hot water until they are soft, about 5-7 minutes. Drain and set aside.
In a large mixing bowl, toss the noodles with carrots, cucumber, bell pepper, green onions, cilantro, and cooked chicken.
Mix chili sauce, soy sauce, and lime juice in a small bowl. Pour this dressing over the noodle mixture and toss to combine.
Step: Wrapping the Rolls
Dip one spring roll wrapper in warm water until it’s pliable, about 10-15 seconds.
Lay the wrapper flat on a clean surface. Place a portion of the noodle mixture on the lower third of the wrapper.
Roll the wrapper tightly after folding in the sides. Ensure the filling is snugly wrapped and the spring roll is sealed.
Step: Cooking the Rolls
Heat a skillet over medium heat and lightly oil it.
Place the spring rolls in the skillet and cook until golden brown on all sides, turning occasionally, about 2-3 minutes per side.
- If you like extra spice, add a teaspoon of red pepper flakes to your noodle mixture.
