- 1 pound Beef stomach
- 2 Bay leaves
- 4 minced Garlic cloves
- 1 medium chopped Onion
- 1 large chopped Bell pepper
- 1/4 cup chopped Fresh cilantro
- 1 tablespoon Vinegar
- 2 tablespoons Olive oil
- Salt to taste
- Ground black pepper to taste
Prepare the Beef Stomach
Clean the beef stomach thoroughly with vinegar and cold water. Make sure to remove any impurities.
In a large pot, cover the beef stomach with water, add bay leaves, and a pinch of salt. Bring to a boil, then reduce to a simmer and cook for about 1.5 to 2 hours until tender.
Make the Base
