Ingredients
  

  • 1 pound Beef stomach
  • 2 Bay leaves
  • 4 minced Garlic cloves
  • 1 medium chopped Onion
  • 1 large chopped Bell pepper
  • 1/4 cup chopped Fresh cilantro
  • 1 tablespoon Vinegar
  • 2 tablespoons Olive oil
  • Salt to taste
  • Ground black pepper to taste

Instructions
 

Prepare the Beef Stomach

  • Clean the beef stomach thoroughly with vinegar and cold water. Make sure to remove any impurities.
  • In a large pot, cover the beef stomach with water, add bay leaves, and a pinch of salt. Bring to a boil, then reduce to a simmer and cook for about 1.5 to 2 hours until tender.

Make the Base

  • While the stomach is cooking, heat olive oil in a separate pan. Sauté onions, bell peppers, and garlic until they’re beautifully caramelized and fragrant.
  • Once the beef stomach is tender, chop it into bite-sized pieces and add it to the sautéed vegetables. Stir in chopped cilantro for that fresh, herby kick.

Final Touches

  • Cook everything together for an additional 10-15 minutes, allowing all the flavors to meld beautifully.
  • Season with salt and pepper to taste.

Notes

  • For an even richer flavor, you can add a splash of homemade sofrito to the dish during the final cooking stage.
  • If you like your dishes a bit spicy, a few dashes of hot sauce or a sprinkle of red pepper flakes will do wonders.
