Ingredients
  

  • 3 cups Large potatoes diced
  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • 1 Red bell pepper chopped
  • 6 large Eggs
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Cheddar cheese shredded
  • 4 large size Flour tortillas
  • 3 tbsp Fresh cilantro chopped
  • Salsa to taste

Instructions
 

Step: Prep Your Veggies

  • Warm up the olive oil in a big pan over medium-low heat.
  • Add the diced potatoes, stirring occasionally, until they begin to soften, about 10 minutes.
  • Toss in the chopped onion and red bell pepper, cooking until the onion becomes translucent.

Step: Scramble the Eggs

  • In a medium bowl, whisk the eggs with salt and pepper.
  • Pour the eggs over the cooked veggies in the skillet.
  • Stir gently with a spatula, allowing the eggs to fully cook and mix with the veggies.

Step: Assemble the Burritos

  • Clear a space to put the flour tortillas down.
  • Sprinkle cheese across each tortilla.
  • Divide the potato and egg mixture evenly among the tortillas.
  • Top with fresh cilantro and a spoonful of salsa per burrito.
  • Roll up the tortillas, tucking in the ends to secure the fillings.
