Ingredients
  

  • 4 sliced Green bell peppers
  • 4 sliced Red bell peppers
  • 2 tablespoons Olive oil
  • 1 large sliced Onion
  • 2 cloves minced Garlic
  • 1 teaspoon Dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions
 

Preparing the Peppers

  • Slice the green and red bell peppers.
  • The olive oil should be heated over medium heat in a big skillet.
  • Add the sliced onions and cook until they’re soft and translucent.
  • Toss in the minced garlic and sauté for about a minute until fragrant.

Cooking the Mixture

  • Add the sliced peppers to the skillet.
  • Stir in dried oregano, salt, and black pepper.
  • Cover and let it simmer on low heat for about 45 minutes to an hour, stirring occasionally, until the peppers are tender.

Notes

  • If you prefer a bit of a kick, add a pinch of red pepper flakes.
  • For a richer flavor, a splash of balsamic vinegar towards the end of cooking does wonders.
  • Leftovers? No problem. They taste even better the next day as the flavors have more time to meld.
