  • To cut the pistachios into small pieces, a food processor

Ingredients
  

  • 4 pieces 6 oz each Fish fillets (like cod)
  • 1 cup Shelled pistachios finely chopped
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons Olive oil
  • 1 teaspoon Lemon zest
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions
 

Prepare the Oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to keep the fish from sticking.

Mix the Coating

  • In a shallow dish, combine finely chopped pistachios, panko breadcrumbs, grated Parmesan, lemon zest, garlic powder, salt, and pepper.

Coat the Fish

  • Brush each fish fillet with olive oil. Press the fillets into the pistachio mixture, making sure they are evenly coated on both sides. Put them on the baking sheet that has been prepared.

Bake

  • Bake in the preheated oven for about 20 minutes, or until the fish flakes easily with a fork and the crust is golden and crispy.

Notes

  • For an extra crunch, you can add a small amount of crushed cornflakes to the pistachio mixture.
  • If you’re watching your sodium intake, opt for unsalted pistachios.
