  • 1 Deer heart cleaned and trimmed

  • 1 cup Vinegar

Preparing the Deer Heart

  • Rinse the deer heart under cold water.
  • Trim off any fat and sinew.
  • Slice the heart into 1/4 inch thick pieces.

Cooking the Heart

  • In a large pot, bring water to a boil.
  • Add the deer heart slices and simmer for 1 hour.
  • Remove the heart and set aside.

Making the Pickling Solution

  • In the same pot, combine vinegar, sugar, salt, and pickling spices.
  • After bringing to a boil, lower the heat, and simmer for 10 minutes.

Pickling

  • Place the cooked deer heart slices in jars.
  • Add sliced onion and minced garlic to each jar.
