  • 1 cup Pumpkin puree
  • 1 cup Granulated sugar
  • 1/2 cup Vegetable oil
  • 2 large Eggs
  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tsp Ground cinnamon
  • 1/2 tsp Ground nutmeg
  • 1/4 tsp Ground cloves
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract

Getting Ready to Bake

  • Preheat your oven to 350°F (175°C). Grease your baking pan or line it with parchment paper for an even easier cleanup.
  • Mix the wet ingredients: In a large bowl, combine the pumpkin puree, sugar, vegetable oil, and eggs. Beat these together until smooth and well blended.
  • Sift together the dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Combine the wet and dry mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Add vanilla extract and mix for another half minute.
  • Pour the batter into the prepared pan, smoothing the top with a spatula to ensure an even layer.

Baking Your Pumpkin Bars

  • Bake for 25-30 minutes in the preheated oven. When a toothpick stuck in the middle of one of the bars comes out clean, they are done.
