Ingredients
  

  • 4 large Potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Ground black pepper
  • 1 cup shredded Cheddar cheese
  • 2 cups shredded Cooked chicken
  • 1 cup Corn kernels
  • 1 cup rinsed Black beans
  • 2 medium diced Tomatoes
  • 1 diced Avocado
  • ½ cup Sour cream
  • ¼ cup chopped Green onions
  • 2 sliced Jalapeños

Preparing the Potatoes

  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly and pat them dry.
  • Cut the potatoes into wedges and toss them in a bowl with olive oil, salt, and pepper.
  • Spread the potato wedges on a baking sheet and bake for 20-25 minutes or until golden and crispy.

Topping the Papas Locas
