Equipment

  • Large pot
  • Mixing bowl
  • Cutting board
  • Knife
  • Measuring cups and spoons
  • Potato masher (optional, for those who like their salad slightly mashed)

Ingredients

  • 3 pounds Potatoes peeled and cubed
  • 4 Eggs hard-boiled and chopped
  • 1 cup Celery finely chopped
  • ½ cup Red onion finely chopped
  • 1 cup Mayonnaise
  • 2 tablespoons Mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoons Fresh dill chopped

Instructions

Preparing the Potatoes

  • Cook the Potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil over high heat, then lower the heat and cook for about 15 minutes, until the potatoes are soft.
  • Drain and Cool: Drain the potatoes and let them cool to room temperature.

Mixing the Salad

  • Combine Ingredients: In a large mixing bowl, combine the cooled potatoes, chopped eggs, celery, red onion, mayonnaise, mustard, apple cider vinegar, sugar, salt, and pepper.
  • Mix Well: Gently mix everything together until the potatoes are evenly coated with the dressing. Be careful not to mash the potatoes unless you prefer a creamier texture.
  • Add Fresh Dill: Sprinkle the chopped dill over the salad and fold it in gently.

Chill and Serve

  • Refrigerate: Cover the bowl with plastic wrap and refrigerate for at least an hour before serving. This makes it possible for the flavors to blend together perfectly.
  • Enjoy: Serve your Mark’s Feed Store Potato Salad chilled, garnished with additional dill if desired.

Notes

  • Potato Choice: Use starchy potatoes like Russets or Yukon Golds for the best texture.
  • Consistency: For a chunkier salad, chop your potatoes larger and be gentle when mixing. For a creamier salad, use a potato masher lightly before adding the other ingredients.
  • Flavor Building: Letting the salad chill in the refrigerator for a few hours or overnight will enhance its flavors significantly.
