Equipment

  • Mixing bowl
  • Spoon or spatula
  • Measuring cups and spoons
  • Serving dish

Ingredients

  • 1 package (10 oz) Frozen spinach, thawed and drained
  • 1 packet (1.4 oz) Knorr Vegetable Soup Mix
  • 1 cup Sour cream
  • 1 cup Mayonnaise
  • 1 can (8 oz), drained Water chestnuts, finely chopped
  • 3 Green onions finely sliced
  • 1 Round sourdough loaf optional for serving

Instructions

Prep the Spinach

  • Thaw the spinach and ensure it’s well-drained. Nobody invited extra water to this party. A good squeeze or a run through a colander should do the trick.

Mix It Up

  • In your mixing bowl, combine the thawed spinach, Knorr Vegetable Soup Mix, sour cream, and mayonnaise. Stir until the mixture is uniform and smooth.

Add the Crunch

  • Fold in the chopped water chestnuts and green onions, adding that much-needed crunch and a pop of color.

Chill Out

  • Cover your bowl and let the dip chill in the refrigerator for at least 2 hours. This gives the flavors time to meld and the dip to thicken to perfection.

Serve It Your Way

  • While waiting is the hardest part, decide how you want to serve this delightful concoction. Hollow out a round sourdough loaf and fill it with the dip for a show-stopping presentation, or simply transfer it to a pretty bowl. Surround it with your choice of dippers: crackers, veggies, or bread cubes.

Notes

  • For a healthier version, substitute the sour cream and mayonnaise with Greek yogurt or a mix of the two.
  • You can add some grated Parmesan cheese or a sprinkle of crushed red pepper flakes for an extra flavor kick.
  • Ensure the spinach is as dry as possible to prevent a watery dip.
  • This dip also pairs wonderfully with a variety of vegetables, such as carrot sticks, bell pepper strips, and cucumber slices, for those looking for a lighter option.
