Equipment

  • Large mixing bowl
  • Dough hook and a stand mixer
  • Rolling Pin
  • Measuring cups and spoons
  • Baking dish (9×13 inches)
  • Small saucepan
  • Wire rack for cooling

Ingredients

  • 4 cups All-purpose flour
  • ¼ cup + 2 tbsp Granulated sugar
  • 2 ¼ tsp Instant yeast
  • 1 tsp Salt
  • 1 cup Water warm
  • ¼ cup Milk
  • cup + ¼ cup Unsalted butter
  • 1 Large egg
  • ¾ cup Brown sugar
  • 2 tbsp Ground cinnamon
  • 4 oz Cream cheese
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract

Instructions

Preparing the Dough

  • Mix the Dry Ingredients: In the large mixing bowl, whisk together 3 cups of flour, ¼ cup granulated sugar, yeast, and salt.
  • Add the Wet Ingredients: In the saucepan, heat the milk, water, and ⅓ cup butter until warm (about 110°F). Add this mixture to the dry ingredients, then add the egg. Stir until a soft dough forms.
  • Knead the Dough: Use the dough hook attachment on your stand mixer to knead the dough on medium speed, gradually adding the remaining flour until the dough is smooth and elastic, about 5 minutes. You could also knead the dough by hand on a floured surface.
  • First Rise: Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place until doubled in size, about 1 hour.

Filling and Shaping

  • Prepare the Filling: Mix the brown sugar and cinnamon in a small bowl. Add the last ¼ cup of butter and melt it.
  • Roll the Dough: After the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a 14×9 inch rectangle.
  • Apply the Filling: Brush the dough with melted butter, leaving a ½ inch border. Sprinkle the cinnamon-sugar mixture over the butter.
  • Roll and Cut: Roll the dough tightly from the long end. Cut into 12 equal slices and place in the greased baking dish.
  • Second Rise: Cover the rolls and let them rise again until nearly doubled, about 30 minutes.
  • Bake: Preheat your oven to 350°F (175°C). Bake the rolls for 25 minutes or until golden brown.

Frosting and Finishing Touches

  • Make the Frosting: Beat the cream cheese, ¼ cup butter, powdered sugar, and vanilla extract until smooth.
  • Frost the Rolls: Once the rolls are slightly cooled, spread the frosting generously over the top.

Notes

To ensure your Knaus Berry Farm Cinnamon Rolls turn out just right, here are some additional tips:
  • Proofing the Yeast: Make sure your yeast is fresh for the best rise.
  • Roll Tightly: To prevent the filling from leaking out, roll the dough as tightly as possible.
  • Don’t Overbake: Keep an eye on your rolls. They should be just golden on top. Overbaking can lead to dry rolls.
