Equipment

Ingredients
  

  • 1 cup Fresh jalapenos finely chopped
  • 1 cup Apple cider vinegar
  • 3 cups Sugar
  • 1 pouch 3 oz. Liquid pectin
  • A few drops Green food coloring optional

Instructions
 

Preparing the Jalapenos

  • Wear gloves to avoid the burn.
  • Chop the jalapenos finely. Remove seeds for less heat.
  • Combine jalapenos with vinegar in the pot.

Mix and Boil

  • Add sugar to the pot and stir well.
  • After bringing the mixture to a boil, let it simmer.

Add Pectin

  • Stir in the liquid pectin.
  • Should you want to, add a few drops of green food coloring.
  • Boil for a minute, then remove from heat.

Jar It Up

  • Pour the jelly into prepared jars using the funnel.
  • Seal the jars while the jelly is still hot.

Cool Down

  • Let the jars cool at room temperature.
  • Verify seals and keep in a dark, cool place.

Notes

  • Skimming the Foam: If foam forms on top of your jelly, simply skim it off with a spoon for a clearer jelly.
  • Storage: Jalapeno jelly can last up to a year in a cool, dark place. It should be used within a month after it is opened and refrigerated.
