Equipment

  • Large mixing bowl
  • Hand mixer or stand mixer
  • 9×5-inch loaf pan
  • Measuring cups and spoons
  • Cooling rack

Ingredients

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1 cup 2 sticks Unsalted butter, softened
  • 2 cups Granulated sugar
  • 4 large Eggs
  • 2 tsp Vanilla extract
  • 1/4 cup Hennessy
  • 1 cup Sour cream

Instructions

Mixing the Dry Ingredients

  • A medium-sized bowl should hold the all-purpose flour, baking powder, and salt.

Creaming Butter and Sugar

  • In a large bowl, beat the softened butter with the granulated sugar until light and fluffy.
  • It’s important to beat well after each egg that you add slowly.
  • Stir in the vanilla extract and Hennessy.

Adding Dry Ingredients and Sour Cream

  • Gradually add the dry ingredients to the butter mixture, alternating with sour cream, starting and ending with the flour mixture.

Baking the Cake

  • Put the batter into the loaf pan that has been prepared.
  • Bake in a preheated oven at 325°F (165°C) for about 60 minutes or until a toothpick inserted into the center comes out clean.
  • It should be moved to a wire rack to finish cooling after 10 minutes of cooling in the pan.

Notes

  • To get a smooth mix, make sure all of the ingredients are at room temperature.
  • Don’t mix the batter too much, or the cake will be too dense.
  • For an extra touch of Hennessy flavor, brush a small amount of Hennessy over the warm cake before it cools.
