Equipment

  • A large mixing bowl
  • An electric mixer or a whisk
  • A rubber spatula
  • A 9-inch round cake pan
  • Parchment paper
  • A cooling rack

Ingredients
  

  • 2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Unsalted butter softened
  • 1 1/2 cups Sugar
  • 4 large Eggs
  • 2 tsp Vanilla extract
  • 1 cup Sour cream
  • 1 cup Fresh strawberries chopped
  • Powdered sugar for dusting

Instructions
 

Prepare the Ingredients

  • All of the ingredients should be set out and allowed to warm up.
  • Preheat your oven to 350°F (175°C). Line your cake pan with parchment paper and lightly grease it.

Mix the Dry Ingredients

  • Get flour, baking powder, and salt and mix them in a bowl.

Cream the Butter and Sugar

  • In your mixing bowl, beat the softened butter and sugar until light and fluffy. This is where the magic starts!

Add Eggs and Vanilla

  • Adding the eggs one at a time and beating well after each one is added. Stir in the vanilla extract.

Combine with Dry Ingredients

  • Gradually add the dry ingredients to the wet mix, alternating with sour cream. Mix until just combined. Avoid overmixing.

Fold in Strawberries

  • Gently fold in the chopped strawberries.

Bake

  • Pour the batter into the prepared pan. Smooth the top with a spatula.

Cooling

  • After 45 minutes, or until a toothpick comes out clean, remove from the oven.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a lighter cake, you can substitute half of the all-purpose flour with cake flour.
  • Make sure all your ingredients are at room temperature to ensure an even mix.
