Ingredients
  

  • 3 lbs Beef chuck roast
  • 3 tablespoons Chipotle peppers in adobo
  • 4 cloves Garlic minced
  • 1 tablespoon Cumin
  • 1 teaspoon Oregano
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 3 tablespoons Lime juice
  • 1 cup Beef broth
  • 2 Bay leaves

Instructions
 

Prepare the Beef

  • Trim the beef chuck roast of excess fat and cut into large chunks.
  • In a small bowl, mix salt, pepper, cumin, and oregano.

Sear the Beef

  • Heat your Dutch oven over medium-high heat and sear the beef chunks until browned on all sides.

Combine Ingredients

  • To the pot, add the minced garlic, chipotle peppers, lime juice, and beef broth. Stir well to combine.
  • Tuck the bay leaves into the mix.

Cook

  • Cover the Dutch oven with its lid and transfer it to a preheated oven at 300°F.
  • Let it cook for about 4 hours or until the beef is tender and falls apart easily.

Notes

  • If the liquid level seems low during cooking, add a bit more broth to keep the meat moist.
  • You can remove the bay leaves before serving, as their job is done by then.
