Ingredients
  

  • 6 large Flour tortillas
  • 500 g Ground chicken
  • 200 g shredded Cheddar cheese
  • 1 finely diced Red bell pepper
  • 1 medium diced Onion
  • 2 tbsp Taco seasoning
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions
 

Prepare the Filling

  • Over medium heat, warm up the olive oil in a pan.
  • Add the diced onion and red bell pepper. Sauté until they’re soft.
  • Toss in the ground chicken, breaking it apart with a spatula.
  • Sprinkle the taco seasoning along with salt and pepper. Cook until the chicken is browned.
  • Take it away from the heat and let it cool down a bit.

Assemble the Crispitos

  • Preheat your oven to 375°F (190°C).
  • Lay a tortilla flat on your workspace.
  • Spread a portion of the chicken mixture along one edge of the tortilla.
  • Top with a sprinkle of cheddar cheese.
  • Roll the tortilla tightly around the filling.
  • Place seam-side down on a baking sheet. Repeat with the remaining tortillas.

Bake

  • Brush the tops with a bit of olive oil for extra crispiness.
  • Bake in the preheated oven for 15 minutes or until they are golden and crispy.

Notes

  • For a lighter version, try using Greek yogurt in place of some cheese.
  • If you like it spicy, add some chopped jalapeños to the filling.
