large Flour tortillas

Ground chicken

shredded Cheddar cheese

finely diced Red bell pepper

medium diced Onion

Taco seasoning

Olive oil
Salt to taste
Pepper to taste
Instructions
Prepare the Filling
Over medium heat, warm up the olive oil in a pan.
Add the diced onion and red bell pepper. Sauté until they’re soft.
Toss in the ground chicken, breaking it apart with a spatula.
Sprinkle the taco seasoning along with salt and pepper. Cook until the chicken is browned.
Take it away from the heat and let it cool down a bit.
Assemble the Crispitos
Preheat your oven to 375°F (190°C).
Lay a tortilla flat on your workspace.
Spread a portion of the chicken mixture along one edge of the tortilla.
Top with a sprinkle of cheddar cheese.
Roll the tortilla tightly around the filling.
Place seam-side down on a baking sheet. Repeat with the remaining tortillas.
Bake
Brush the tops with a bit of olive oil for extra crispiness.
Bake in the preheated oven for 15 minutes or until they are golden and crispy.
Notes
For a lighter version, try using Greek yogurt in place of some cheese.
If you like it spicy, add some chopped jalapeños to the filling.
