Ingredients
  

  • 4 cups All-purpose flour
  • ¼ cup + 2 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2 ¼ teaspoons Instant yeast
  • 1 cup lukewarm Water
  • ¼ cup lukewarm Milk
  • cup melted Unsalted butter
  • 1 Large egg room temperature

For the Filling:

  • ¾ cup Brown sugar
  • 2 tablespoons Ground cinnamon
  • ¼ cup softened Unsalted butter

For the Icing:

  • 4 ounces softened Cream cheese
  • ¼ cup softened Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 ½ cups Powdered sugar

Instructions
 

Making the Dough

  • Mix Dry Ingredients: In your large mixing bowl, whisk together 3 ¾ cups flour, ¼ cup granulated sugar, and the salt. Make a well in the center and add the yeast.
  • Add Wet Ingredients: Pour in the lukewarm water, milk, melted butter, and the egg to the dry ingredients. Mix until a sticky dough forms.
  • Knead the Dough: Turn the dough onto a floured surface and knead, adding the remaining flour as needed, until the dough is smooth and elastic—about 8-10 minutes.
  • First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.

Preparing the Filling

  • Mix Filling Ingredients: While the dough is rising, mix the brown sugar and cinnamon in a bowl. Keep the softened butter separate; this will be spread onto the dough later.

Assembling Cici’s Cinnamon Rolls

  • Roll the Dough: After the dough has doubled, punch it down and roll it out on a floured surface into a 14×18 inch rectangle.
  • Spread Butter: Evenly distribute the softened butter over the dough, then sprinkle with the cinnamon and sugar mixture.
  • Roll It Up: Roll the dough tightly from the long end, sealing the edge.
  • Cut the Rolls: Cut the roll into 12 equal pieces and place them cut side down in a greased 9×13 inch baking pan.
  • Second Rise: Cover the pan with a damp cloth and let the rolls rise for another 30 minutes.
  • Bake: Preheat your oven to 350°F (175°C). For 25 minutes, or until golden brown, bake the rolls.

Making the Icing

  • Combine Icing Ingredients: While the rolls are baking, beat together cream cheese, butter, vanilla, and powdered sugar until smooth.
  • Ice the Rolls: Once the rolls are done, let them cool for about 10 minutes, then spread the icing over the warm rolls.
