Ingredients
  

  • 2 cups dried Pinto beans
  • 1 finely diced Onion
  • 3 minced Garlic cloves
  • 1 seeded and finely chopped Jalapeño
  • 2 tablespoons Vegetable oil
  • Salt to taste
  • 6 cups Water

Instructions
 

Preparing the Beans

  • Rinse your pinto beans in cold water to remove any dirt or debris.
  • Add the beans and 6 cups of water to a large pot.
  • Bring to a boil, then reduce the heat and simmer covered for about 2 hours.
  • Note: Make sure to check the beans occasionally, adding water if necessary to keep them submerged.

Sautéing the Aromatics

  • Using medium heat, warm up the oil in a pan.
  • Put in the diced onion and cook until it turns clear.
  • Throw in the minced garlic and chopped jalapeño, sautéing for another minute until fragrant.

Bringing It All Together

  • Once the beans are tender, add the sautéed onion, garlic, and jalapeño to the pot.
  • Continue to cook on low heat, mashing the beans with a wooden spoon or masher until they reach your desired consistency.
  • Season with salt to taste.

Notes

  • For an extra kick, keep some of the jalapeño seeds in the mix.
  • If you like your refried beans super smooth, blend them instead of mashing.
