- 2 cups dried Pinto beans
- 1 finely diced Onion
- 3 minced Garlic cloves
- 1 seeded and finely chopped Jalapeño
- 2 tablespoons Vegetable oil
- Salt to taste
- 6 cups Water
Preparing the Beans
Rinse your pinto beans in cold water to remove any dirt or debris.
Add the beans and 6 cups of water to a large pot.
Bring to a boil, then reduce the heat and simmer covered for about 2 hours.
Note: Make sure to check the beans occasionally, adding water if necessary to keep them submerged.
Sautéing the Aromatics
Using medium heat, warm up the oil in a pan.
Put in the diced onion and cook until it turns clear.
Throw in the minced garlic and chopped jalapeño, sautéing for another minute until fragrant.
Bringing It All Together
Once the beans are tender, add the sautéed onion, garlic, and jalapeño to the pot.
Continue to cook on low heat, mashing the beans with a wooden spoon or masher until they reach your desired consistency.
Season with salt to taste.
