- 4 boneless chicken breasts
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 1 onion finely chopped
- 2 bell peppers sliced
- 1 cup mushrooms sliced
- 2 cups tomato sauce
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Preparing the Chicken
Start by preheating your oven to 375°F (190°C).
Take the chicken breasts and, using a meat tenderizer or rolling pin, pound them to an even thickness. This not only helps them cook uniformly but also makes them tender, much like how Sinatra’s voice softens hearts.
Put salt and pepper on both sides of the chicken totaste.
Sautéing the Veggies
Put olive oil in a big pan and heat it over medium-low heat.
Add the minced garlic and chopped onion to the pan, sautéing until they’re just starting to soften.
Throw in the bell peppers and mushrooms, cooking until they’re tender and singing with flavor.
Bringing Chicken Sinatra Together
Put half of the vegetables in a separate bowl. Place the chicken breasts in the pan, adding them to the remaining veggies.
Cook each side for about 5 minutes or until the chicken is golden brown and almost cooked through.
Spread the veggies that were set aside around the chicken in the pan, then pour the tomato sauce over everything.
Sprinkle the mozzarella and Parmesan cheese evenly over the top, followed by a dash of Italian seasoning.
Baking to Perfection
Cover the pan with aluminum foil and bake in the preheated oven for 20 minutes.
Take off the foil and bake for another 10 minutes, or until the cheese is lightly browned and bubbling.
Garnish with fresh basil before serving.
