Ingredients
  

  • 4 pieces Boneless chicken breasts
  • 1 cup All-purpose flour
  • 2 Eggs beaten
  • 1 cup Bread crumbs
  • 4 slices Provolone cheese
  • 1 cup Fresh mushrooms sliced
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 2 tablespoons Butter
  • As needed Olive oil
  • To taste Salt and pepper

Preparation of Chicken

  • Begin by flattening the chicken breasts to about 1/4 inch thickness using a meat hammer. This ensures they cook evenly and absorb the flavors well.

Breading the Chicken

  • Season the flour with salt and pepper. Dip each chicken breast first in the flour, then the beaten eggs, and finally coat them with bread crumbs.

Frying the Chicken

  • Heat olive oil in a skillet. Once hot, fry the breaded chicken breasts until golden brown on each side. It needs 4 minutes for each side. Remove and set aside.

Making the Sauce

  • Place butter and sliced mushrooms in the same pan. Sauté until the mushrooms are golden. Add chicken broth and lemon juice, and let the sauce simmer until it thickens slightly.

Baking the Chicken

  • Place the fried chicken in a baking tray. Top each piece with a slice of provolone cheese and pour the mushroom sauce over the chicken. Bake in a preheated oven at 375°F for about 10 minutes, or until the cheese is bubbly and golden.

Notes

  • For a crispier crust, you can add a pinch of garlic powder to the bread crumbs.
  • If you prefer a cheesier experience, feel free to add an extra slice of cheese to each chicken breast before baking.
