Ingredients
  

  • 4 pieces Chicken breasts
  • ¼ cup Cherry blossom jam
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon Fresh ginger minced
  • 2 Garlic cloves minced
  • 1 tablespoon Sesame oil
  • Salt to taste
  • Ground black pepper to taste
  • 2 finely chopped Spring onions for garnish
  • 1 tablespoon Sesame seeds for garnish

Instructions
 

Preparing the Chicken

  • Begin by rinsing the chicken breasts under cold water and pat them dry with paper towels.
  • Apply salt and pepper to both sides of the chicken as needed.

Making the Cherry Blossom Glaze

  • In a mixing bowl, whisk together cherry blossom jam, soy sauce, honey, minced ginger, and minced garlic until well combined.
  • Put the sesame oil in a big skillet and heat it over medium-low heat.
  • Once hot, add the chicken breasts to the skillet and cook for about 5 minutes on each side, or until golden brown.

Glazing and Cooking

  • Pour the cherry blossom glaze over the chicken in the skillet.
  • Make the heat low and put the lid on the skillet. Let it simmer for 20-25 minutes, or until the chicken is cooked through.
  • Occasionally, spoon the glaze over the chicken to ensure it’s evenly coated.

Garnishing and Serving

  • Put the chicken on a serving platter after it’s done cooking.
  • Garnish with finely chopped spring onions and a sprinkle of sesame seeds.
  • Serve hot and enjoy the flavors of spring with each bite!

Notes

  • For an even more intense flavor, marinate the chicken in half the glaze for at least 30 minutes before cooking.
  • If cherry blossom jam is not available, a mix of cherry jam and a drop of almond extract can be a good substitute.
  • Keep an eye on the chicken while it simmers to avoid overcooking. Chicken breasts are lean and can dry out if cooked too long.
