Ingredients
  

  • 2 tablespoons Olive oil
  • 1 medium Onion diced
  • 2 medium Carrots diced
  • 2 stalks Celery diced
  • 3 cloves Garlic minced
  • 500 grams Ground beef Halal
  • 1 can 400g Canned diced tomatoes
  • 4 cups Beef broth Halal
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • To taste Salt
  • To taste Black pepper
  • 1 can 400g Kidney beans, drained
  • 1 can 400g Corn, drained

Instructions
 

Preparing Your Base

  • Heat the Oil: In a large pot, heat the olive oil over medium heat.
  • Sauté the Veggies: Add the diced onions, carrots, and celery. Cook until the onions are translucent and the veggies are slightly softened, about 5-7 minutes. To finish cooking, add the minced garlic and stir it in.

Adding the Meat

  • Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Cook until the beef is well-browned, breaking it up with your spoon as it cooks.

The Heart of the Soup

  • Combine the Ingredients: Stir in the canned diced tomatoes, beef broth, basil, oregano, salt, and pepper. Bring the mixture to a boil.
  • Simmer: Reduce the heat and let the soup simmer for about 30 minutes to allow the flavors to meld together beautifully.

The Final Touch

  • Beans and Corn: Add the kidney beans and corn to the pot. Continue to simmer for another 10 minutes, or until the soup is heated through and the vegetables are tender.
